This recipe is wonderful on a summer night. It doesn't take long to prepare but will appear like you spent a lot of time on it. When I have friends over for dinner on a busy weeknight, I prepare this and usually get a lot of "ooh's" because it's so colorful and fresh-looking. This is one of my go-to dishes when I want to make something special but don't have a lot of time.


Use two skillets to cook this quickly, or cook it in two batches, keeping the first batch in a warm oven until ready to serve.

Serves 4

Ingredients
4 8-ounce fresh whole brook or rainbow trout, cleaned and boned with heads and tails intact
12 fresh basil leaves plus 6 thinly sliced fresh basil leaves, divided
12 sprigs fresh Italian parsley

4 tablespoons olive oil, divided
6 cloves garlic, peeled and thinly sliced, divided
5 small plum tomatoes, seeded and chopped, divided
2 medium zucchinis, trimmed and chopped, divided
1 cup frozen petite yellow corn kernels, divided

Rinse and thoroughly dry the trout inside and out with paper towels. Fill each trout cavity with 3 fresh basil leaves and 3 sprigs Italian parsley. Using kitchen twine, tie each trout cavity closed. Season each trout with salt and pepper.

Heat 2 tablespoons oil in 2 large skillets each over high heat until the oil begins to shimmer. Add half the garlic to each skillet and cook, stirring, for about 3 minutes. Remove the garlic from the oil and discard.

Place 2 trout in each skillet and cook until brown and slightly crisp, about 3 to 4 minutes per side. Reduce the heat to low and add about half the vegetables and half the thinly sliced basil leaves to each skillet; simmer until the vegetables are cooked but still firm and the fish flakes easily with a fork, about 8 to 10 minutes. Transfer the cooked fish and vegetables to a platter and serve immediately.

Paula Deen's Real Women of Philadelphia

Awhile back I announced an exciting opportunity to become the next big cooking star. Paula Deen teamed up with Philadelphia Cream Cheese on a nationwide search to discover the "Real Women of Philadelphia."  This exciting contest to find four fabulous female home cooks has created quite a stir (no pun intended!) The four very skilled and lucky ladies will each win $25,000 and work with the community to create a special cookbook featuring all of our favorite recipes made with Philly.

So far over 5,000 home cooks have submitted wonderful videos of unique recipes they created using Philadelphia Cream Cheese!  The recipes were divided into 4 categories: appetizers, side dishes, main dishes and desserts.  On the Real Women of Philadelphia website you can view any of the video entries.  I have thoroughly enjoyed watching many of these videos and seeing the creative ways to incorporate the cream cheese in the recipes.  We aren't just talking cheese cake... How about "Blue Peach Pizza?"  You're curious about that one, aren't you?  Or Oatmeal-Apple Cream Pies?  There are so many talented home cooks and they are so comfortable in front of the camera! What is even more impressive to me is the sharing and interaction on the community forum on the site.  Conversations range from cream cheese to cooking to child care. The women are the site are wonderful and warm so check it out and join in the conversation. Paula Deen also contributes her thoughts, recipes and entry highlights on the site.  Now y'all don't want to miss all of the fun!  I couldn't resist throwing in a "y'all...."

They are down to only 16 finalists..... and only four will be crowned the new Hosts of the Real Women of Philadelphia!  The final cook-off to determine the winners is approaching!  On Wednesday, June 30th at 8pm (EST), the Cook-Off event between the 16 finalists will be airing live on the Real Women of Philadelphia website and also here on Laura's Best Recipes!

Hyundai Appetite For Adventure - Cumin Seed

Good Bite is at it again!  They challenged me to participate in Chef David Lawrence's campaign with Hyundai called "Appetite for Adventure."  In this series, 8 bloggers were given a recipe challenge to come up with a dish using a specific "adventurous" ingredient.  My ingredient was whole cumin seed.  Fortunately, I use whole cumin all the time... in fact I never buy the pre-ground stuff in the jars at the grocery store.

The Real Women of Philly: Creamy Linguini and Paula Deen

The Recipe:


Linguini with Creamy Garlic and Mushroom Sauce 

Ingredients: 

  • 4-6 ounces – Philly Cream Cheese (dependant upon level of desired creaminess)
  • 5 tsp unsalted butter
  • 5 cloves chopped fresh garlic
  • 3 TBSP chopped shallots or leeks
  • ½ cup milk (+plus more if needed)
  • 4 slices of good quality bacon or pancetta
  • 1 lb – sliced crimini or shitake mushrooms
  • ½ red & yellow bell pepper, chopped
  • 3 TBSP fresh basil (or more if desired)
  • 1 lb linguini pasta
  • drizzle of olive oil
  • Parmesan-Reggiano cheese

Method:
 

Crisp bacon or pancetta in an oven or on stove top. Chop into ½ x ½ squares and set aside.

Fill a pot of cold water and bring to a boil. Add pasta. Prepare sauce while pasta is cooking.

In a small sauce pan, melt butter on low heat. Add chopped shallots and sauté for a few minutes.. then add garlic until just fragrant – about 45 seconds to 1 minute. Add cream cheese and continue to simmer on low while stirring until cream cheese is melted and creamy. While stirring add milk and continue to stir. Add more milk if necessary to get the right consistency. Add thyme.

In a large sauté pan, sauté the mushrooms. Be sure not to crowd them so they are slightly browned and don’t steam while cooking. Add the bacon. Set aside then sauté peppers until just softened.

Drain pasta in a colander. Toss in just a bit of olive oil until pasta appears to shimmer but it shouldn’t be overly coated. Toss with some of the sauce and mushrooms, bacon and peppers until just blended. Add freshly grated Parmesan and sprinkle a bit more fresh thyme after plating. Season with salt and pepper.

This would make a nice side dish for beef… or simply add chicken and it can become a main course.

If you have been reading my blog, you know that I enjoy contests for charity.  It's a fun way to get involved with great causes while working with my favorite food bloggers around the country. 

Recently CampbellsKitchen.com and Goodbite.com teamed up to create another charity contest opportunity. They asked five of the nation's top food bloggers to come up with a recipe using one of Campbell's Condensed "Great for Cooking" Soups.  Good Bite put together a video series showcasing the preparation of the recipes.  Viewers may vote for their favorite recipe (or food blogger.)  The winning blogger will donate $1,000 to their favorite charity.

Quaker - Create Your Day Charity Drive for Share Your Strength

 Quaker and Goodbite.com Team Up to Raise Money for Share Your Strength

As you probably know, I recently won a contest with Quaker Oats.  The prize was the best part... $10,000 was donated to Food For The Poor for the children of Haiti.  This was before the earthquake that devastated that region.  So, when Quaker and Good Bite asked if I would participate in another contest for charity - I jumped at the chance.  And this time those who benefit from this one live a little closer to home.... right here in the United States.

soshome.gifShare Your Strength is not just a charity organization.... it's a movement to stomp out childhood hunger in the United States.  We live in the land of dreams.  America offers more opportunity than any other country in the world.  Yet, we have kids who are hungry.  It's just not right.  It's even worse today in this bad economy.  Not only are families struggling more, but good charities are having a harder time raising money to help them.
