This recipe is wonderful on a summer night. It doesn't take long to prepare but will appear like you spent a lot of time on it. When I have friends over for dinner on a busy weeknight, I prepare this and usually get a lot of "ooh's" because it's so colorful and fresh-looking. This is one of my go-to dishes when I want to make something special but don't have a lot of time.
Use two skillets to cook this quickly, or cook it in two batches, keeping the first batch in a warm oven until ready to serve.
Serves 4
Ingredients
4 8-ounce fresh whole brook or rainbow trout, cleaned and boned with heads and tails intact
12 fresh basil leaves plus 6 thinly sliced fresh basil leaves, divided
12 sprigs fresh Italian parsley
4 tablespoons olive oil, divided
6 cloves garlic, peeled and thinly sliced, divided
5 small plum tomatoes, seeded and chopped, divided
2 medium zucchinis, trimmed and chopped, divided
1 cup frozen petite yellow corn kernels, divided
Rinse and thoroughly dry the trout inside and out with paper towels. Fill each trout cavity with 3 fresh basil leaves and 3 sprigs Italian parsley. Using kitchen twine, tie each trout cavity closed. Season each trout with salt and pepper.
Heat 2 tablespoons oil in 2 large skillets each over high heat until the oil begins to shimmer. Add half the garlic to each skillet and cook, stirring, for about 3 minutes. Remove the garlic from the oil and discard.
Place 2 trout in each skillet and cook until brown and slightly crisp, about 3 to 4 minutes per side. Reduce the heat to low and add about half the vegetables and half the thinly sliced basil leaves to each skillet; simmer until the vegetables are cooked but still firm and the fish flakes easily with a fork, about 8 to 10 minutes. Transfer the cooked fish and vegetables to a platter and serve immediately.

Good Bite is at it again! They challenged me to participate in Chef David Lawrence's campaign with Hyundai called "Appetite for Adventure." In this series, 8 bloggers were given a recipe challenge to come up with a dish using a specific "adventurous" ingredient. My ingredient was whole cumin seed. Fortunately, I use whole cumin all the time... in fact I never buy the pre-ground stuff in the jars at the grocery store.

The Recipe:
Ingredients:
- 4-6 ounces – Philly Cream Cheese (dependant upon level of desired creaminess)
- 5 tsp unsalted butter
- 5 cloves chopped fresh garlic
- 3 TBSP chopped shallots or leeks
- ½ cup milk (+plus more if needed)
- 4 slices of good quality bacon or pancetta
- 1 lb – sliced crimini or shitake mushrooms
- ½ red & yellow bell pepper, chopped
- 3 TBSP fresh basil (or more if desired)
- 1 lb linguini pasta
- drizzle of olive oil
- Parmesan-Reggiano cheese
Crisp bacon or pancetta in an oven or on stove top. Chop into ½ x ½ squares and set aside.
Fill a pot of cold water and bring to a boil. Add pasta. Prepare sauce while pasta is cooking.
In a small sauce pan, melt butter on low heat. Add chopped shallots and sauté for a few minutes.. then add garlic until just fragrant – about 45 seconds to 1 minute. Add cream cheese and continue to simmer on low while stirring until cream cheese is melted and creamy. While stirring add milk and continue to stir. Add more milk if necessary to get the right consistency. Add thyme.
In a large sauté pan, sauté the mushrooms. Be sure not to crowd them so they are slightly browned and don’t steam while cooking. Add the bacon. Set aside then sauté peppers until just softened.
Drain pasta in a colander. Toss in just a bit of olive oil until pasta appears to shimmer but it shouldn’t be overly coated. Toss with some of the sauce and mushrooms, bacon and peppers until just blended. Add freshly grated Parmesan and sprinkle a bit more fresh thyme after plating. Season with salt and pepper.
This would make a nice side dish for beef… or simply add chicken and it can become a main course.
