I think it is about time I get myself one of these as, like you said, it would be really convenient. The start of the year always means a lot of rushing for me and having this in my kitchen may help me have more homemade food than takeouts.

Hard to make a choice of what my favorite comfort food from a crockpot is. My choices would have to be a toss up of some kind of pasta dish such as crockpot rigatoni to mac & cheese. I’m also partial to homemade soups/stews especially this time of year when it cold outside. When in a rush though, either a pot roast or a roast pork fills the spot. Thank you for being able to enter this contest. A new crockpot to go along with my older one would be ideal to make sides in or to be able to prepare bigger portions for the freezer to save time & money.

Once it has cooked to mouthwatering tenderness…I separate the meat juices from the meat, refrigerate separately. Later remove the fat from the “broth” and shred the beef, mix together and add dry onion soup mix…..OMG!!
My Favorite comfort food is Beef or Pork Roast with potatoes & Carrots!!!!
Anything with butternut squash. Stir in some warm goat cheese and top with toasted walnuts…yummmm!

3 shots Southern Comfort whiskey
4 gallons beef stock
Bring beef stock to a boil and turn down to a simmer. Add remaining ingredients. Serve immediately with Prime Rib or Prime Rib Sandwiches!

Beef stew! Delicious in a slow cooker! I also make Italian sausage sandwiches in my slow cooker for our Christmas celebrations – sausage links (bun size), sliced green peppers, sliced onion and a jar or can of spaghetti sauce. Cook all day or all night. Serve on hard rolls with a thick slice of provolone cheese. Everyone loves them.

Chili
Mine is our old family recipe for Chicken Noodle Soup! Once it’s starting getting chilly outside that’s the soup that’s cooking inside!!
I love chili and beef stew in the crock pot for winter.
I recently discovered the versatility of my slow cooker. It’s the best way (short of an outside grill) to slow cook meats. Here’s my recipe for PULLED PORK SANDWICHES:
Small White Bread Buns or large, wrap style, tortillas
a 3-4lbs pork ‘picnic roast’, you can use ‘boneless country style ribs’ instead…shop sales!
Taco Seasoning Mix
Dehydrated Onion Flakes
Gouda cheese slices or cheddar shreds
1000 island dressing, mayo works too
pickle chips
(everything but the seasoned pork is optional)
Put your pork roast in the slow cooker with about 1″ of water…wet the top of the roast as you load it, to keep the seasoning in place. Slow cook on ‘high’ for 8 hours. When you get home from work it will be done. Remove and drain off any juices. You can reserve them for au jus or discard at this point. Shred the pork between tongs until it’s stringy. Add in a little bbq sauce if desired, or just have it available at room temperature. Return to the slow cooker, set to ‘keep warm’ now. You can leave this out for your kids to make their own sandwiches as they come and go, or for game day guests. It’s perfect for crazy week nights or to make on a Friday night and have available all day Saturday.
My favorite recipe is Lasagne. I hope I am lucky.

Yankee Pot Roast

Preheat the oven to 350 degrees Fahrenheit.

Place the chicken breasts in a baking dish. Add salt and pepper to taste and cover the dish.

Bake for about 20 to 30 minutes. Allow the chicken to cool until you can handle it.

Place the cooled chicken breasts on a cutting board. Cut it into finely shredded pieces and set it aside.

Combine the broth and the soup in the stockpot and mix well. Add the frozen vegetables and the shredded chicken, and stir.

Heat the soup, on medium heat, until it simmers.

Mix the flour, salt and pepper in a shallow bowl.

Separate each biscuit by their layers — usually a top, middle and bottom layer. You should have 24 biscuit pieces.

Dredge the biscuit pieces in the seasoned flour and gently place them into the hot soup. Continue until all the biscuit pieces are in the soup.

Push the biscuits beneath the surface of the soup gently with a spoon, but do not stir. If you stir, the biscuits will disintegrate.

Simmer the biscuits until they set completely — about five to 10 minutes.

Remove from the heat and serve immediately.
Lasagne with sauce made from scratch.

I and my family love Chicken and Dumpling soup. The dumplings are best when heavy and dense. Dislike fluffy dumplings!
Cowboy Chicken
4 boneless, skinless chicken breasts
brown sugar
Dijon mustard
one large onion thinly sliced
2cups salsa, medium
Layer chicken, mustard, onions, brown sugar, salsa.
Cook on low 6 hours.
Shred chicken
Serve over rice.
Clam chowder with hot rolls straight from the oven with homemade strawberry jam.
Here’s a really good recipe:
Smothered Steak
1 can of Campbell’s Golden Mushroom soup
1 can of Campbell’s Cream of Mushroom soup
1 can of beef gravy
Round steak, thickest you can find
Morton’s Nature’s Seasoning
Pour soups and gravy into crock pot. Cut steak into individual servings. Lay steak on soups in the crock pot and sprinkle with Morton’s Nature’s Seasons. Push steak into the soups. Cover pot. Turn on low. Cooks all day while you are away. When return home, make mashed potatoes, vegetable and serve.

This is simple and very tasty:
layer 2 carrots, chopped, 2 celery stalks, chopped, 1/s large onion, chopped, in bottom of crockpot
place 1 whole chicken on vegetable layer
add 2 carrots, chopped, 2 celery stalks, chopped, 1/s large onion, chopped on top of chicken
sprinkle with garlic salt and pepper (add any other seasonings to taste)
Add 1 c. of white wine
Cook on low for 8 hours
Enjoy!

Chicken Taco Chili
My favorite meal is Meatloaf, Mac and Cheese, Pinto Beans, and Biscuits.
This is my favorite meatloaf :
Ingredients
Meatloaf:
1 cup Whole Milk
6 slices White Bread
2 pounds Ground Beef
1 cup (heaping) Freshly Grated Parmesan Cheese
1/4 teaspoon Seasoned Salt
3/4 teaspoons Salt
Freshly Ground Black Pepper
1/3 cup Minced Flat-leaf Parsley
4 whole Eggs, Beaten
10 slices Thin/regular Bacon
Sauce:
1-1/2 cup Ketchup
1/3 cup Brown Sugar
1 teaspoon Dry Mustard
Tabasco To Taste
Preparation Instructions
Preheat oven to 350 degrees. Pour milk over the bread slices. Allow it to soak in for several minutes.
Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.
With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)
Lay bacon slices over the top, tucking them underneath the meatloaf.
Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.
My favorite pinto beans are slow cooked in the crock pot and Crock Pot Mac and Cheese is the best. Not to mention my favorite biscuits mad with my Granny’s recipe.

Stone Soup! ( I jokingly call my winter soup this)~ It’s the soup that has a little bit of everything- I use it to clear out my freezer! Any and all types of soups…if it can be tossed together and left cook all day in a crockpot its always great when getting home from work. I frequently just get creative and skip recipes. My current crockpot is getting a bit rough (broken lid) from years of heavy use. And it’s great for adding a cut of meat and some veggies for a healthy meal.

My absolute fave comfort food in winter would have to be a cheesy chicken and broccoli casserole served over rice with warm, homemade bread.
I love chili too but most of all I think a nicely marbeled chuck roast with potatoes, onions, carrots, gravy and warm bisquits cooked slowly at low temps. for 3-4 hours is the best.

save carcasses and meat from holiday turkeys, roast a duckling if u can find 1 and/or chicken thighs
use bones to make a broth, saute a shitload of onions, celery and bell peppers along with some garlic some garlic
bring broth to boil, add okra (smothered and frozen in season) smoked sausage, meats and seasonings including s & p, worst. sauce and crushed red pepper.
add file and instant roux to taste and there u go!

All our favorites come from the crockpot! Our #1 being bone broth. It’s used as a base for most of our soups, stews, stir fries or just drank out of a mug on a cold day!
Thick rich Chili with peanut butter sandwiches, then make a hearty bread pudding with lots of cinnamon and raisins with creamy sauce on top also in the crock pot. yummmmmmmy!

I have a large family of five little people and love using my old school (four-settings – off, low, high,, and warm) crock to cook all kinds of meals while I’m sleeping, working, and even relaxing with my children. My newly found favorite is a buffalo chicken sandwich recipe that I found online and made “kid-friendly”. I am an Alabama country girl that only measures when solving math problems and when baking cakes…so bear with me:
All you do is, in a crockpot, add an adequate amount (enough for seconds) of sliced, boneless/skinless chicken breast, sprinkle with a little garlic powder ground cumin, white pepper, chipotle pepper, and pour in some EXTRA MILD buffalo sauce over the chicken to generously coat the slices and mix well. Turn the crock on “Low” for 4hrs, stir and serve on a bun! My fave…Kaiser! Bake up some sweet potato fries and watch the smiles begin!

Make pre-packaged stuffing according to package directions. Put in crock pot. Add a layer of boneless pork chops or boneless, skinless chicken breasts. Top with cream of mushroom soup (or any other cream of … soup). Cook for 6-7 hours on low. YUMMY!!

Ingredients
• 1 pound bulk Italian sausage
• 2 cups water
• 2 cups chopped cabbage
• 1 can (14-1/2 ounces) Italian stewed tomatoes, undrained and cut up
• 1 can (14-1/2 ounces) beef broth
• 1 can (10-1/2 ounces) condensed French onion soup
• 1 package (9 ounces) refrigerated cheese tortellini
• 1/2 cup grated Parmesan cheese
Directions
• In a large saucepan, cook sausage over medium heat until no longer pink; drain. Stir in the water, cabbage, tomatoes, broth and soup. Bring to a boil. Reduce heat; simmer, uncovered, for 8 minutes. Stir in tortellini; cook 7-9 minutes longer or until pasta is tender. Sprinkle with cheese. Yield: 10 servings (2-1/2 quarts).

My husband and I love this chicken recipe. It is great anytime of the year. Serve with rice.
Dry rub for chicken –
Ingredients
• 1 tablespoon garlic powder
• 1 tablespoon onion powder
• 2 tablespoons paprika
• 2 tablespoons dried parsley
• 1 tablespoon dried oregano
• 1/2 teaspoon cayenne pepper, or to taste
• 2 teaspoons rubbed sage
• 2 teaspoons dried thyme leaves
• 1 teaspoon ground coriander
• 1 teaspoon celery seed
• 1 teaspoon sea salt
• 1 teaspoon ground black pepper
Combine ingredients above. Store in a sealed jar.
INSTRUCTIONS FOR COOKING A WHOLE CHICKEN
1. Loosely chop the onion and place it in the bottom of the slow cooker.
2. Rub the spice mixture all over the chicken. You can even put some of the spices inside the cavity and under the skin covering the breasts. I sometimes put a quarter of an onion in the cavity too.
3. Put prepared chicken on top of the onions in the slow cooker, sprinkle garlic over top of chicken, cover it, and turn it on to high. There is no need to add any liquid.
4. Cook for 4 – 5 hours (for a 3 or 4 pound chicken) or until the chicken is falling off the bone.

The Winter Comfort food in our house would be mommas beef stew.
sirloin tips marinate them in red wine over night with olive oil and garlic salt. Then prepare the slow cooker for the meat and fresh parsley and seasonings . Chop half a vadalia onion and slow cook for 3 hrs and then prepare your vegetables red potatoes and carrots and broccoli and then small quarters of corn and celery and add to the pot cook one hour more. Prepare a rue for the drippings and then add one cup of water and then add one cup of beef broth cook a while longer till it thickens.. Mix all together with the stew .Serve wit a tuscan bread

Roast Prime Rib of Beef with Port and Stilton Gravy
Ingredients:
8 lbs. beef prime rib (4 rib joint)
2 onions, peeled, cut into 1/3-inch rounds
2 tablespoons garlic oil
1 1/2 teaspoons Maldon sea salt or 3/4 teaspoon table salt
1 teaspoon dried thyme
1/2 teaspoon cayenne pepper
Port and Stilton Gravy:
2 tablespoons fatty juices, reserved from the roast beef pan
1 tablespoon all-purpose flour
1/2 cup ruby port
1 tablespoon cooked onions from the roast beef pan, optional
2 cups beef stock
4 1/2 ounces blue cheese (recommended: Stilton)
1 teaspoon red currant jelly
Kosher salt and freshly ground black pepper
Extra juices from the roast beef
Directions:
Preheat the oven to 450 degrees
Take beef out of the refrigerator to bring to room temperature, which could take 1 hour or more.
Put the onion slices into a roasting pan and sit the beef on top of them. Use the onion slices as props to help the rib sit up on its bones in an “L” shape. Smear the oil over the white fat of the rib, and sprinkle with the salt, thyme and cayenne pepper. Cook according to the beef’s weight and your taste. For medium rare give it 15 minutes per pound, which means, for a roast this size, a cooking time of about 2 hours unless the beef is straight out of the refrigerator, in which case, add another 20 minutes or so. If you want medium, give the roast, from room temperature, 20 minutes per pound, and if you like well-done meat, 30 minutes per pound.
When the beef comes out of the oven, remove to a carving board and allow it to rest in a warm part of the kitchen under a tent of foil for 30 minutes before carving; or just leave, tented in its foil, for the same time. Do not start clearing up the pan, even if you have taken the beef out, however, as you will need some of the pan juices and onions for the gravy.
Port and Stilton Gravy:
In a saucepan over low heat, add 2 tablespoons of the fatty juices from the roast pan. To make a roux, whisk in the flour, and then the port. Keep heating and whisking over a fairly gentle heat, until thick and bubbling. If you want to blend the onions into the stock, do so now. Be sure to avoid adding any blackened onions. Put the onions in a blender with the beef stock and mix together. Or leave the stock just as it is. Take the saucepan off the heat, and gradually whisk in the beef stock. Whisk in the blue cheese and red currant jelly. Season, to taste, with salt and pepper. Pour in any juices that remain in the pan or on the cutting board. Transfer to gravy boat and serve with the beef.

Guiness Stew…..but I use a little less guiness ‘half a bottle’ or the food taste too much like the beer….Lots of Rosemary and Thyme…carrots, potatos (red ones are the best IMO) red onions and let it slow cook for 6-8 hours, til the meat falls apart…. Butter some whole grain thick bread and pour on top…..add some fresh ground pepper.

• Yield Serves 6
Ingredients
• 1 tablespoon olive oil
• 4 garlic cloves, minced
• 1 pound Italian sausage (sweet or hot)
• 1 teaspoon chili powder
• 2 cans (14 1/2 ounces each) diced tomatoes in juice
• 2 cans (15 ounces each) black beans, rinsed and drained
• 6 cups homemade tomato stock
• 1 package (10 ounces) frozen corn kernels
• Coarse salt and ground pepper
• 1 cup crushed tortilla chips, plus more for serving (optional)
• 1 tablespoon fresh lime juice, plus lime wedges for serving
Directions
1. Sauté the sausage, breaking up into small clumps.
2. In a large saucepan, heat oil over medium. Cook garlic and chili powder until fragrant, about 1 minute. Add sausage, tomatoes (with juice), beans, broth, and corn; season with salt and pepper.
3. Bring soup to a boil; reduce to a simmer and cook for 20 minutes. Add tortilla chips; cook until softened, about 2 minutes. Remove from heat; stir in lime juice, and season with salt and pepper. Serve soup with lime wedges and, if desired, more chips.
Chopped avocado is great added at the end too. During the summer, when tomatoes are ripe, I chop tomatoes and add them to the finished soup along with the avocado.

My favorite and family favorite is my Grandmother’s Turkey Bone Soup. She will make this when it is very cold and snowy out.
You start with the left over turkey carcass and remainder turkey meat from Thanksgiving. You put it in a large pot with water maybe some chicken stock, and boil it until the meat is able to pull away from the bone. As you are pulling the meat from the bones, continue to simmer the stock and add in-
1 can of cream corn
1 large can of tomato sauce
whatever veggies sound good (she typically uses a vegetable medley that is pre-mixed)
and whatever seasonings she uses (her soup is spicy from the Cajun seasonings she used on the turkey)
Then she adds the meat back into the soup and then simmers it all day until dinner time, around 5pm.
You can add large tender noodles like “dumpling” or fiesta colored spiral noodles if desired
The soup is wonderfully complemented with cornbread.
It will yield however many servings depending on how much meat and broth you made. She makes a rather large batch to eat on for a few days. Four can eat on it for about two days
I have such wonderful fond childhood memories of playing in the snow all day sledding, snow ball fights, just laying in the snow from being exhausted after going up and down the hills, or until my skin was cold and pink, then being told to walk to Grandma’s house because she made turkey bone soup. It is such a healthy and hearty soup to thaw out to eating. It doesn’t take much to fill up on this hearty soup.
My favorite is Potato Soup with sausage and bacon. Although not a complete start from the crock pot, this is the best by far soup I’ve ever had. It’s comparable to the Olive Garden Zupa Tascana soup. Potatoes, heavy cream, italian sausage, dry red chili peppers, onion, and kale.

Our number one comfort food is pot roast. Nothing like the smell when you get home after a cold outside here in Maine. Can’t live without my crockpots !
Potatoes and dumplings with a side of German sausage. mmm
Italian beef
5 lbs chuck roast
1 large onion (sliced)
2 heaping Tablespoons of garlic
2 bottles of beer (your choice)
2 beef bouillon cubes
I large jar of peperoncini
I teaspoon crushed red pepper
Salt and pepper to taste
Put all in crock pot cook for 12 hrs on low, take beef out and shred and remove any and all fat and connective tissue, put shredded beef back in crock pot and serve on hard rolls with mozzarella cheese. This is a family favorite around this house!!
Split pea soup, chowders, chicken soup, pasta sauce. Comfort food is always better made in a slow cooker. I promise to give it a good home. It can replace mine which I received as a wedding gift – back in 1978!!

I love these sweet & sour meatballs served over steamed white rice.
Sweet & Sour Meatballs
1 ½ lbs. Ground beef 1 tsp. Salt
1 ½ c. Rick Krispies ½ tsp. Pepper
1 med. Onion, chopped finely
Form meatballs into 1 inch balls and brown on all sides.
Sauce:
1 c. white sugar 4 T. flour
4 T. soya sauce 1 c. water
1/2 c. white vinegar
In saucepan, mix together sugar and flour. Add soya sauce, vinegar and water. Cook over medium heat until sauce thickens. Cover meatballs with sauce and simmer in slow cooker or on the stove until thoroughly cooked. Can be doubled easily.

I use a recipe that replicates Olive Garden’s Pasta e fagioli soup except I kick it up with Cayenne pepper. It turns out wonderfully in a slow cooker. Yum!

Stews, Chili (Beef and White Bean Chicken), Roast Beef with Roasted Root Veggies, Roast Pork with Mashed Potatoes and Applesauce.
Chili!
Ingredients
2 tablespoons olive oil
1 large red onion, diced
1 medium red bell pepper, diced
1 medium yellow bell pepper, diced
4 cloves garlic, chopped
1 pound ground buffalo/venison, etc
8 ounces Italian sausage, casing removed
1/4 cup chili powder
1 tablespoon ground cumin
1 tablespoon dried oregano
One 4-ounce can tomato paste
One 28-ounce can diced tomatoes
One 14-ounce can diced tomatoes
One 15-ounce can cannollini beans, drained and rinsed
One 15-ounce can kidney beans, drained and rinsed
One 15-ounce can pinto beans, drained and rinsed
Shredded Cheddar, for garnish
Sour cream, for garnish
Chopped green onions, for garnish
Directions
Add the olive oil to a large Dutch oven over medium-high heat. Once hot, add the onions and peppers and saute until soft. Add the garlic and saute until just fragrant. Stir in the beef and sausage, breaking it up with the back of a wooden spoon, and cook until browned. Drain the beef mixture through a colander placed over a large bowl. Add the meat back to the Dutch oven and stir in the chili powder, cumin and oregano. Cook for about 2 minutes. Stir in the tomato paste into the beef; this will “toast” it and give the chili more flavor. Transfer everything to the slow cooker. Add the diced tomatoes and beans. Cook on low for 4 hours.
Top with shredded cheese, sour cream and chopped green onions before serving.

My favorite winter comfort food is called Black Eye Pea Supper. It has hot sausage, tomatoes, onions, peppers, rosemary and oregano. Sprinkle Cheddar cheese on top of each bowl. I never liked black eye peas until I tried this.

I love chicken and noodles in the crock, super easy. 3 or 4 frozen chicken breasts, pour 1 carton chicken stock over it, 2 cans of cream of chicken, pepper to taste, turn on low for 8 hours, then after this time, remove chicken, shred, put back in, dump in frozen pre cooked egg noodles, stir, and turn to high for one hour. Serve with rolls and mashed potatoes, really yummy, feeds 6-8 adults easily.

■1 (15 ounce) can kidney beans , drained)
■2 teaspoon chili powder (adjust to taste)
■1/2 teaspoon oregano
■1/2 teaspoon paprika

■dash of red pepper flakes
Brown the meat with the onion and green pepper. Drain meat, add in all other ingredients and simmer for 1 hour.

Servings: 6
“Cabbage leaves stuffed with ground beef, onion and rice, covered in a sweet and tangy tomato
sauce and cooked in a slow cooker.”
INGREDIENTS:
12 leaves cabbage
1 cup cooked white rice
1 egg, beaten
1/4 cup milk
1/4 cup minced onion
1 pound extra-lean ground beef
1 1/4 teaspoons salt
1 1/4 teaspoons ground black pepper
1 (8 ounce) can tomato sauce
1 tablespoon brown sugar
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
DIRECTIONS:
1. Bring a large pot of water to a boil. Boil cabbage leaves 2 minutes; drain.
2. In large bowl, combine 1 cup cooked rice, egg, milk, onion, ground beef, salt, and pepper.
Place about 1/4 cup of meat mixture in center of each cabbage leaf, and roll up, tucking in
ends. Place rolls in slow cooker.
3. In a small bowl, mix together tomato sauce, brown sugar, lemon juice, and Worcestershire
sauce. Pour over cabbage rolls.
4. Cover, and cook on Low 8 to 9 hours. or High 4 to 5 hours.

White Chicken Chile
My favorite winter comfort food is chili. In the pot, put:
Hamburger, browned with your favorite spices
chili powder (@ tablespoon)
green salsa
cilantro–lots of it
paprika–generous amount
finely chopped onion (yellow)
finely chopped bell peppers (red and green)
finely chopped egg plant
one or more cans of chopped fire roasted tomatoes with basil
precooked beans can be added too, or not.
Place it all in a crock pot, slow cooker, or pot on the stove, simmer on low temperature until the egg plant dissolves.

Chicken, Cheddar, and Bacon Casserole
Ingredients:
8 ounces mini penne pasta or elbow macaroni
6 to 8 slices bacon
2 tablespoons butter
1 pound chicken breasts or chicken tenders, cut in 1-inch pieces
4 green onions, sliced
2 tablespoons flour
1 1/2 cups milk
1/2 cup chicken broth or more milk
1 teaspoon salt, or to taste
1/4 teaspoon ground black pepper
1/2 teaspoon dried leaf thyme
8 ounces Cheddar cheese, shredded
4 ounces American cheese, shreds or chopped
1 cup frozen peas, thawed
1 cup bread crumbs
1 tablespoon melted butter
Preparation:
Cook the pasta in boiling salted water following package directions.
Grease a 2 1/2- to 3-quart baking dish. Heat oven to 350°.
In a large skillet or saucepan, cook bacon until crispy. Remove bacon to paper towels; crumble. Pour off grease in the skillet, leaving about 1 or 2 teaspoons. Add butter to the skillet and cook the chicken over medium-low heat until cooked through. Add green onions and cook for 1 minute longer. Add flour and stir until blended into the fat. Gradually stir in the milk, cooking and stirring until slightly thickened. Stir in salt, pepper, and thyme. Add the cheeses and thawed peas, along with crumbled bacon. Spoon into the prepared baking dish.
Combine bread crumbs with 1 tablespoon melted butter; sprinkle over the casserole. Bake for 25 to 30 minutes, until topping is browned and casserole is bubbly.
Serves 6.

Chili Con Carne!
Italian Meat Ball Soup
for the meat balls:
1 lb ground beef
1/2 cup Italian Bread Crumbs
1 egg
salt n pepper to taste
1/2 tsp minced Garlic
2 Tbsp of Parmesan Cheese
Combine the ingredients and form into small meat balls,
fry or broil,till brown.
In a Large Pot or Crock Pot
6 cups of Beef Broth
Combine a large can of crushed Tomatoes
2 carrots peeled and sliced in circles
1 onion,chopped
1/2 Green Pepper,chopped
1/2 Tsp chopped Garlic
salt & Pepper to taste
Simmer the stock and the ingredients above,
add the meat balls,simmer
till carrots are tender about an hour
(Crock Pot about 2 hours on high)
Add:
2 small Zucchini,washed and sliced in circles
and a cup of Rotini Noodles after,the carrots are done
simmer for about 20-30 minutes more
(Crock Pot about 30-40 minutes longer)
Serve with a nice crunch crisp green salad and some

TACO SOUP
1lbs lean ground beef
1 large sweet onion
2 tbsp cumin
2 cloves garlic
1 large can black beans
1 large can pinto beans
1 regular can sweet corn
1 large can crushed tomato
1 can regular rotelle tomatoes
1 can optional hot rotelle tomatoes
1pkg dry taco seasoning
1pkg hidden valley ranch dry dressing mix
Brown meat with cumin, add garlic and onion when almost done. cook 3-5 minutes.
drain beans and corn in colander
add all ingredients in crock pot cook on low 4-6 hrs.

CHICKEN TORTILLA SOUP
1 pound shredded, cooked chicken
1 (15 ounce) can whole peeled tomatoes, mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
2 cloves garlic, minced
2 cups water
1 (14.5 ounce) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas
vegetable oil

Directions
Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
Preheat oven to 400 degrees F (200 degrees C).
Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.

Creamy Shrimp/Corn Chowder
Makes 12, 1 cup servings • Prep time: 20 minutes • Cook time: 30 minute
1 Tablespoon butter
1 cup diced onion
1 cup diced celery
1/2 cup diced red bell pepper
1 teaspoon chopped garlic
4 cups low sodium chicken broth
2 cups cubed potatoes
2 cups fat-free half and half
1/4 cup cornstarch
3 cups sweet corn kernels (fresh, frozen or canned)
1 pound cooked and peeled small shrimp
1/4 teaspoon cayenne pepper
1/2 teaspoon dried basil
In a large stockpot, heat butter over medium heat and sauté onions, celery and bell pepper and garlic until softened. Add chicken broth and potatoes. Cook 15 minutes until potatoes are soft. Whisk cornstarch into milk and add to stockpot along with corn kernels. Cook until thickened. Add shrimp and simmer until cooked through. Season with cayenne and basil.
This can also be made with Chicken/Turkey, ETC.
Nutrition information per serving: 150 calories, 2.5g fat, 1g saturated fat, 85mg cholesterol, 440mg sodium, 18g carbohydrates, 2g fiber, 5g sugars, 12g protein.
Ham Hocks and Lima Beans
1 pound package dried lima beans
2 pounds smoked ham hock
2 TBS butter
1 TBS olive oil
1 large onion, chopped – small dice
2 large celery stalks, chopped – small dice
2 large carrots, washed and chopped – small dice
1 1/2 tsp pepper
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1 1/2 bay leaves
salt to taste
In a large bowl, cover dried beans with 8 cups cold water, let stand overnight. Drain beans, reserving water.
In large pot, melt butter mixed with olive oil, create a mirepoix au gras – saute onion, celery and carrots until softened, then add the ham hocks and add reserved water to cover. Cover, heat to to boiling, then reduce heat and simmer 30 minutes. Add the beans, and everything except salt. Add any remaining water – note: you might have to add some new water as you will be simmering for a very long time.
Simmer for 5 1/2 hours, stirring occasionally. The lima beans will be recognizably lima bean, yet will have lost some of their integrity and texture, absorbing delicious pork flavor, while giving up some of their starch to the liquid helping create a near stew like consistency. Remove the bay leaves and discard. You can remove the meat and fat from the bones, and discard the bones – and fat if desired.

3 cans Del Monte tomato sauce
1 tablespoon oil olive (or any cooking oil you normally use)
1 cup flour
5 cubed potatoes
1 bag carrots (peeled and slice)
celery (3 stalks, cleaned and sliced)
one large spanish onion, diced
one can baby lima beans
one 15 ounce can of LeSeure baby peas
I know how to do this on top of the stove but would love a chance to prepare in a slow cooker – the meat would cook longer, become more tender and this is a great belly filling dinner to come home to on a cold night! Serve with garlic bread and some Locatelli cheese grated and tossed liberally on the stew!

My daughter’s favorite Christmas Eve comfort food is West African Chicken and Groundnut Stew I found in the Pillsbury Best of the Bakeoff. It is a family tradition now to have this after the hustle and bustle of that busy, wonderful day.

Brunswick Stew and Cornbread
A big pot of chili with cornbread.
Beef Stew with Stout and Smokes Paprika
3T olive oil
1T butter
2 lbs stew beef
1 lg onion chopped
3 cloves garlic minced
4 c beef stock
2 c water if stew is to thick
1 T worcester sauce
2 T tomato paste
1/2 t paprika
fresh ground pepper
1 t sugar
4 carrots sliced in chunks
4 red shin potatoes quartered
12 oz stout beer
2 t minced parsley
2 slices stale crumbled french bread
Heat oil, butter in a lg pan. Brown meat till VERY well seared, remove meat, add onion , stir and cook till soft, add stout to pan and heat well. Scrape all from pan. Place carrots and potatoes on bottom of crock pot, meat on top. Add all other ingredients, (except bread) pour beer/ onions on top.
Cook on low for 6-7 hours till carrot/ potatoes are soft and meat if tender.
1/2 hour before done, add bread and stir well.

I found my new favorite recipe in Cooking Light magaine that calls for hot italian turkey sausage, merlot and a flurry of fantastic spices. My second winter comfort food fave would have to be Pork Green Chili Stew with Posole and homemade toritllas. I am a crock pot worshipping winter cuddling foodie who’s tired 9 year old crock pot is on it’s last leg:)

baked Potato soup
Cut the potatoes about 1/2-1 inch cubes (like for Mashed potatoes)
Dice an onion
Garlic (to taste)
butter
salt and Pepper (to taste)
Put slow cooker covered with water (on Low for 4 hours or high for 2 hours) NOTE: My slow cooker isn’t slow 🙁 so adjust for your cooker
NOTE: If it is too thin for your tastes add some instant potatoes to thicken before adding milk.
about 30 minutes before serving add about
1 C of milk
1/2 C shredded cheese
bacon bits
serve with a dollop of sour cream and chives
To my family this tastes like a Baked Potato with the works. I have seen several variations on this recipe but this is a VERY basic one that I came up with all on my own on the stove and adjusted to the slow cooker.

I use my crock pot for so many dishes but my pot roast is the one I do the most. Experimenting with desserts. I don’t have one with presets, just a fairly cheap one.
My favorite Winter Comfort Crock Pot Dish (Handed down from Mother)- is Butter Bean Stoup. Throw in a ham bone left over from the holiday meal – some beans, onion, celery and carrot… Sure you can add some butter – but not necessary. The beans are buttery smooth themselves.. So warm and comfy. Yummy! Add anything to your taste.. There is no going wrong with Butter Bean Stoup.

I have two favorite crockpot recipes. The first would be homemade chicken, kielbasa, shrimp, and vegetable gumbo. There is nothing like it on a cold winter day (we also eat it during the summer too because it is so good). My second crockpot recipe would be Potato Soup like they fix at O’Charleys. My daughter could eat the whole pot by herself, it is so good.

I love to use the vegetables that are available fresh to pick in our winter to make pot roast and vegetables, hearty minestrone soup, split pea soup and even chicken papriash! Mine is Homemade chicken and noodles that my grandma makes from scratch. This recipe is passed down from her grandmother to her mother and now to her and everyone loves when se decides to make it for us. She makes her own noodles and it is delicious! I cant wait to learn how to make it for my family!

My fave crockpot recipe is Beef Pot Roast made with a can of mushroom soup, quartered onions, carrotts, quartered potatoes, fresh mushrooms and….on ccn of cranberry sauce with whole berries. Cook about 6 hours. Fantastic. Afterwards and for leftovers I heat some of the sauce, mix with sour cream and serve over noodles along with slices of leftover roast….sort of stroganoff. This always makes a hit at a potluck affair.

I love my slower cooker so much!!! This is why I need a new one!! With a busy family she is my Best friend in the morning & I love her more @ 6, when they are all coming @ me! Mexican Chili…the house smells so good when we get home when it is cooking.
Navy Beans with Sweet Italian Sausage, Kielbasa and a meaty ham bone with whole garlic cloves. Slow cooked for hours until the house is so aromatic that you are ready to eat the walls.

Something that always cheesy potatoes with brats while cooking in the crock pot it smells as good as it taste!
Venison Stew
Ingredients
2 lbs. cubed venison
1/4 cup lime juice
1/4 cup extra virgin olive oil
1/8 cup balsamic vinegar
1/2 tsp. salt
1/2 tsp cayenne pepper
1 tbs. minced garlic
1 tsp. dried basil
2 sweet potatoes, peeled and cubed
2 large carrots, cleaned and sliced
1 large sweet onion, chopped
1 small bag frozen peas
1 tbs. corn starch
1/2 cup cold water
Take first eight ingredients, down to and including dried basil, and place in a large plastic bag. Marinate in bag in fridge for up to 24 hours. Pour everything in bag in a crock pot and cook on low 6-7 hours. Then add potatoes, carrots, and onion to pot and cook an additional hour. Add the peas and cook an additional 1/2 hour. Turn on high, then stir corn starch into cold water until corn starch is thoroughly mixed in. Pour into pot and stir for a few minutes on high and then turn off. Let sit for about 15 minutes stirring occasionally.

Slow Cooker Short Ribs
Brown 3 lbs of bone in short ribs that have been seasoned with salt and pepper, with 2 sliced onions, 3 cloves chopped garlic. Place in slow cooker, add 2 bottles of any cheap beer and a can of diced tomatoes. Cook on high for 5-6 hours, then add several peeled and chunked carrots. Continue cooking until carrots are cooked to your liking. Serve with buttered and parsleyed egg noodles. Quick and easy and delicious.

One of my favorite slow cooker recipes is a recipe that I make with beans (usually 3 different kinds), stewed tomatoes, Italian sausage and pasta. There’s more ingredients than that, but those are the main ingredients. It’s one of my family’s favorites too.

My favorite winter comfort food is potato soup, but my favorite slow cooker comfort food is a healthy serving of short ribs – sweet and sticky and Kansas City Style definitely!
Last night I made Slow Cooker Pulled Beef BBQ Fajitas….this recipe was given to me by a co-worker several years ago and it is really tasty. It is GREAT for working parents. Serve on your choice of tortillas with sour cream and cheese.
2.5 lb. beef roast (I prefer a beef tri-tip)
1 medium yellow, sweet onion
2 cups of your favorite BBQ sauce
3/4 cup salsa
1 T chili powder
1 t. ground cumin
1 16 – ounce bag of frozen peppers and onions
1/2 t. salt
18 flour tortillas
shredded cheese
sour cream
Place all ingredients in your crock pot. I will usually chunk my meat into 1 1/2 inch cubes for easier cooking…a beef tri-tip roast works well just pay attention to the striations of the meat and cut accordingly. Cover with your lid and cook on low heat for 8 – 10 hours. Remove the meat only long enough to shred with a fork. Put back into cooker and mix well. If you prefer your veggies a little firmer then omit the bag of pepper and onions until you put the meat back into the pot and add them then. Either way I put the sweet, yellow onion chunked in during the initial cooking process. Cook til desired tenderness, 30 minutes to 1 hour longer if vegetables were added later. Remember, using sweet BBQ makes the final result more of a pulled beef flavor. I like one that is a little spicier. Use a slotted spoon to serve…it will drip so be careful. I live in Florida during the winter, but the sunny weather doesn’t chase away those cravings for comfort foods! I love using our seasonally available fresh vegetables to make an old-fashioned pot roast, minestrone soup, split pea soup or even chicken paprikash! I have never owned a slow cooker, but now with an empty nest and no one to turn the oven off at the end of the day, a slow cooker would be a welcome addition to my kitchen!

I usually make one of two things for Super Bowl Sunday- a slow cooker of ham and potato soup or one of Italian beef for sandwiches. Either one stays warm in the cooker and people can help themselves the entire time they are watching the game. I add sandwich fixings for the soup or a variety of chips and veggies to go along with the sandwiches. Add a platter of assorted cookies and everyone is happy!

We have 2 smallish old crockpots and I’ve been practically begging my husband for a newer/bigger one to replace and retire the other 2, but he has yet to take a hint. I love making all kinds of things in the crockpot, chili, chicken and dumplings, stews etc. But what I like the most about them is you can get creative and make wonderful appetizer dips etc for when company comes over and not worry about stuff getting cold through the night until guests leave.

My favorite dish is middle-eastern. It’s a tomato based sauce with layered eggplant, sirloin steak chopped, onion, tomatoes and green peppers. Sauce includes a Chaldean spice called baharat, citric acid and salt. Served over long-grain or basmati white rice. I’ve never made it in a crock pot since I don’t have one but I bet it would be delicious.

Combining Choice Beef Tips, Choice Ground Beef, Italian Sausage, Spicy Chorizo, and minced Pepperoni, with a rich homemade chili gravy will warm the body and soul from the inside out. Adding the moist ‘Yellow Cake’ (cornbread) is simply the pièce de résistance…y’all! (Had to slip the Southern twang in there.) 🙂

My family loves my “Italian Sausage Soup” The funny thing is that it started out as left-over Corned Beef and Cabbage turned into a sweet and sour soup and added Italian Sausage since there wasn’t much corned beef left. My husband and I get into it together to make a homemade Portuguese Kale Soup served with a nice crusty bread. This soup cooks all day and smells yummy, and hits the spot on a cold raw winters day. This soup has everything: a beef soup bone and stock ingredience, some portuguese seasonings, Linguica, and Chourico, carrots, potatoes, kidney beans and of course the Kale. We don’t have access to Portuguese bread in the south, but our local Publix makes a great crusty bread in a pinch. That dose it! I’m off to the grocery store to buy the ingredience to make a small batch in my small crock pot.. hint hint. 🙂

Add the Ranch and Italian mix to the Roast, then add 1 cup of water and 1 packet of gravy mix add to the roast cook on low for 6 hours until roast falls apart .. Great on a Sunday afternoon …

Workman’s roast- rump roast season with salt & pepper , garlic cloves insert in roast. In a bowl mix can of cream of mushroom,onion soup mix, worchestshire sauce pour mixture on top of roast. I add more pepper on top of mixture. In crock pot for about 7hrs , depending on size of roast. Melts in your mouth, gravy is out of this world!!

I like various meats, cooked to be tender, seasoned and cubed. Then make any number of sauce based on how I feel at the time. Cook asst veggies and serve all mixed over rice. If all I have in the house is chicken I tend to serve that with a cream sauce over pasta. I’ve yet to purchase a slow-cooker but I think this would be ideal for that kind of cooking.

Wow. Favorite winter comfort food. That’s hard because there are quite a few wonderful comfort foods. The first one that popped into my head was Chicken & Dumplings. I thought about Spoonbread with buttermilk, stews, roast with potatoes and carrots, soups of all kinds. But I decided that I’d stick with the one that came to mind first.
Chicken & Dumplings…and I love my mom’s the best. Others are good too, but I love hers best. Maybe because it’s made with such love. I think I’ll call her up and ask her to make some. She makes the fluffy dumplings rather than the noodle kind (although I like both). I love biting into the soft, warm, fluff of the dumpling. I melt into a state of bliss. :o)
Slow Cooker Beef Brisket! Yumm!
Trim and thoroughly rise a beef brisket and place it in a slow cooker. Then add 1 Large Onion, 2 Cloves of Fresh Garlic, 1 Bay Leaf, 1 TB mustard seeds, 1 Organic Orange, spiked with 6-8 Cloves., Freshly cracked pepper. Cover with water and place on high until heated thoroughly. Reduce to low and simmer at least 4 hours. Skim off fat periodically, if desired. When ready to serve, remove from crock pot and let stand for at least 15-20 minutes. Slice thinly for best flavor. Enjoy!

I guess technically it’s not MY favorite comfort food, but it is MY FAVORITE comfort food to make for my children cause it’s their favorite crock-pot meal, has lots of memories and we always had lots of laughs and gales of laughter discussing our “Shipwreck Stew” We would discuss what each componant was shipwreck wise, wood from ship, shark and what have you.
You cook up 1lb burger
cut up several potatoes like fries uncooked
kidney beans
chopped fresh onion
stewed tomato
tomato paste
beef boulion
cubed velvetta cheese
black olives and mush are optional
can also add other beans for variety

My grandmother and mother cooked Winter Soup if we were sick with a cold,etc. it was tomato juice with cabbage and plenty of onion. Season with some bacon drippings, salt and pepper.

My favorite is this chicken chili recipe I make — I saute some pieces of chicken breast in butter and onions, and get it nice and browned. Then I add beef broth, a can of tomato sauce, and some ancho chili powder, garlic powder (or, even better, garlic cloves sauteed), a can of Ro-Tel tomatoes and green chilies, a can of black beans…and cinnamon! I also sometimes add a little honey, to give it a very slightly sweet taste. it is amazing. And hearty for a cold day!

Italian Sausage So
1 lb Italian sausage crumbled and browned
3 cans diced Italian tomatoes
2 cans artichoke hearts. Drained
1 chopped onion
1tsp Italian seasoning
1tsp oregano
1tsp basil
1/2 tsp pepper
1/2 tsp salt
Cook all ingredients for one hour
Finally add one zucchini cut into small pieces and continue cooking until tender!

12 oz whole grain elbows cooked according to package
2 cups half and half
1 cup whole milk
1/4 stick butter melted
2 cups shreaded sharp cheddar cheese
2 cups colby jack shreaded cheese
1/2 toasted panko
1 cup shreaded parm cheese
1 egg beaten
paprika, salt, pepper
Mix all but the elbows, add elbows, put in lt. greased crock pot sprinkle with panko crumbs
cook on low for 3 hrs.

You can’t go wrong with Taco Soup in the winter! Easy to prepare and cook. Plus, everyone loves it!
Chili, beef stroganoff, chicken tortilla soup, french onion soup, pot roast, roasted chicken…can you tell I’m hungry?
So comforting and SO easy: Take a whole chicken, rinse and pat dry. Place in slow cooker, place a few lemon slices and a couple of garlic cloves, chopped celery, inside the chicken. Melt a little butter and pour over chicken, along with preferred spices, pepper, Nature Seasons, cayenne pepper, parsley, rosemary, etc. Cook on low all day. The last few hours throw in some wide egg noodles, carrots, onions, new potatoes and just keep cooking. It smells heavenly and tastes even better and is ever so comforting. Chicken will fall off the bone ~ pour broth over the egg noodles ….oh my, I’m getting hungry !

I love 3 ways. What it is is spaghetti noodles (angel hair) skyline chili and mild Cheddar cheese. You can add onions kidney beans or even hot sauce depends on how you like it. Also if you have not tried it I would have to say it is something you t on a must try list any friends that have tried it loves it

My “throw together chili” I basically take the mini portions of leftovers that I have frozen and add it to chili beans and canned tomatoes. It always turns out wonderful but different each time!

It’s open crab season here! What could sound better then a crock pot full of delish Cioppino (fish stew or soup)? The recipe originates from San Francisco. It is considered the signature Italian – American dish, In the Bay area. Cioppino goes fabulous with our world famous breads. Cioppino is centered around The Catch of the Day. The Seafood farmers market has the Shrimp, little neck Clams, Mussels scrubbed and bearded, Crab, Lobsters, fish etc. This is comfort food. Never comes out the same ~ Like Louisiana Gumbo. It’s great to come together and sit by the fireplace, would you like a wine pairing? I would Love the shinning new crock pot in my kitchen. Endless recipes to try!

My favorite winter recipe is beef stew. I’ve recently started adding parsnips, rutabagas and turnips to the mix of chunked potato, carrots, celery, onions and mushrooms. I put everything in the slow cooker, adding beef stock to the flour dredged, browned beef, garlic, bay leaf, pepper and salt. It creates the most savory gravy. My family loves my beef stew.
I’d love the new slow cooker. I currently use a cooker I received as a wedding shower gift back in the 80’s. The housing is rusting and it’s getting much too small for my crowd. Thank you for the chance to win!

I retired off a ranch in New Mexico where I enjoyed the best green chili stews made by great local cooks. We even had a chili cook off in Galisteo New Mexico every fall. Hope I win but I am not a great cook and would understand if I didn’t.
My mom’s Pasta Fagioli (Beans and Macaroni)
1 medium onion (or ½ large onion), diced
1 to 2 cloves garlic, minced
1 tbls good olive oil
1 15 oz. can tomato sauce
1 15.5 oz. can cannellini beans, rinsed and drained
Salt and pepper as desired (if at all)
About ½ box of Ditalini or Elbow macaroni, prepared per instructions on box
Heat oil in large saucepan over medium heat. Add onion and garlic, sautéing until just translucent, about a minute or two. Stir in sauce and rinsed beans. Bring to a bubble, and then reduce heat to low. Cook, covered, for 45 minutes, stirring occasionally.
Prepare macaroni per instructions on box. Drain, and return to pot. Stir in sauce and beans over low heat. Remove from heat and serve. Sprinkle with freshly grated parmagianno regianno.
Tip: Add a couple of shelled hard boiled eggs to sauce while cooking for an extra treat. Also, create some onion “scoops” by cutting a medium onion in half lengthwise and then separating the layers. Use an onion “scoop” as a spoon to eat the macaroni and beans. Each time you put it in your mouth you will get the taste of the raw onion with the macaroni. Delicious!

one of our all time faves in my family is a hearty beef stew!
1 1/2 lb stew meat, cut bite sized and seared
1 medium onion quartered
2 stalks celery chopped
2 carrots, coursely sliced
3 potatoes cut corsely
1 c frozen peas
1 c frozen corn
salt and pepper to taste
3 c beef stock
1 T Kitchen Bouquet seasoning
place all in slow cooker, place on hi setting for 8 to 10 hours

I just found a yummy recipe – VERY simple, too – for shredded beef. It is soooo good, that I don’t put it on mashed potatoes, a roll, or anything! I eat it straight out of my old, small crock pot. That said, I would really like THIS one!!! I use my old crock pot because my slow cooker doesn’t like to be on ‘low’….It seems to have one temp, and it’s too high. Everything burns, boils, etc. can’t get a simmer to save my life!!

I have a WONDERFUL recipe for Taco Soup that can be cooked in the Crockpot. It is below:
1 lb ground beef (or turkey, or chicken)
1 pkg taco seasoning
1 pkg Ranch Dressing Mix
1 can hominy
1 can black beans
1 can kidney beans
1 can great northern beans
1 can corn (optional)
Cook the meat and stir in the taco seasoning. Drain all cans of beans and hominy and/or corn. Throw all into the crock pot. Stir in the ranch dressing mix and add 1 – 2 cups of water. Let simmer on low aaaallll day.
Serve with grated cheese, sour cream and tortilla chips.
Makes a WHOLE BUNCH and it freezes really well.

My favorite slow cooker meal to make in the winter is spicy beef stew. Chuck roast, red potatoes, baby carrots, yellow onions, celery [diced into bite sized portions], beef stock/beef gravy (depending on how thick you like your stew sauce), montreal steak seasoning (2 tablespoons), season with black pepper, crushed red pepper, and garlic salt. Cook on low for 6-8 hours. Very yummy!!

Green Chile Stew is a favorite in the winter … a New Mexico recipe and one of my ‘comfort’ foods for sure!
3 ingredient soup: 2 can Great Northern Beans, 3-4 boneless pork chops, and a 16 oz jar of your favorite salsa. Cook on low for 6-8 hours.
It’s delicious and easy to through together.
Yesterday I made a vegetable, lentil and quinoa stew in my 20 year old crock pot that iis from my husband’s first marriage. (yuck). But, the stew was amazing. I used a can of diced tomatoes, a cup of lentils, a cup of quinoa, an onion, one acorn squash (peeled and diced), pound of sliced carrots and a box of chicken stock. Simmered for the day and topped with parmesan shred for dinner. My house smelled amazing.

My favorite winter comfort food is a Sausage Potato Casserole that you make in the slow cooker. It only consists of beer brats, potatoes, chicken broth, cheddar cheese, and salt and pepper to taste. I make a thick french onion soup with a rich thick broth, seasoned with paprika and bay leaves. We add toasted squares of a hearty bread with melted cheese all over. In the second crock is a dessert of cherry crisp or apple. Best way to cook in the winter. Mix it and let the cooker do the work. Viola! Time to eat!

I like to keep it simple and make chili. Reminds me of home and cures my homesickness!
My favorite is a simple chili soup my mom taught me how to make. I stick it on low and let it simmer all day and Ed eat it for lunch and dinner. It is super easy to make and there is always left overs for the rest of the week.

I love to make pork roast in the slow cooker. I put caramelized onions and sauerkraut in the bottom and place a pork roast (bone-in) seasoned with salt and pepper on top and let it cook all day. Serve with boiled potatoes and dark rye bread and you have a delicious meal!

We love Peppercorn Glazed Chicken with the rest of the pot stuffed with carrots with skins on, onions, potato and celery. A slow cooker gives that perfect meal.
My favorite pot roast!
Use bottom round or rump roast. Add about an inch water to bottom of cooker. Place meat fat side down. Cover with 2-3 large cans cream of mushroom soup and 1 envelope of dry onion soup. Start on high to get it bubbling a little, then move to low and cook all day. When ready-the meat should shred. Serve over egg noodles and with red cabbage and green beans. Gravy is already there in cooker! Yummy!

Always have loved a slow cooker for soup. But since I discovered dried beans can be cooked in a slow cooker without any pre-soaking and no worries about boiling dry, I am using one more than ever!

I love the slow cookers…my favorite winter comfort food in the slow cookers….oh hard to choose — split pea/ham soup, chicken noodle soup, pork roast w/saurkraut applesauce and craisins, chicken w/balsamic vinager and garlic pepper seasonings, potatoes cooked in slow cooker, chicken cacciatore, meatballs, — that is to name a few favorites, i love slow cooking, just makes my life so much easier as i throw it all in before work in the morning and when we get home my boys can feed themselves before they are running off to their sporting activities when i get home late from work. If I won this, I would give my very old crockpot (since 1986) to my daughter to use. slow cookers are the best!!!

SERVINGS 6
1 lb lean (at least 80%) ground beef
1 medium onion, chopped (1/2 cup)
2 cups Old El Paso® Thick ‘n Chunky salsa
1 can (15 oz) tomato sauce
1 can (4.5 oz) Old El Paso® chopped green chiles
2 teaspoons chili powder
1 can (15 to 16 oz) pinto beans, drained, rinsed
Shredded Cheddar cheese, if desired
Sliced green onions, if desired
Sour Cream, if desired
1. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
2. In 3- to 4-quart slow cooker, mix beef mixture and remaining ingredients except beans.
3. Cover; cook on Low heat setting 8 to 10 hours.
4. Stir in beans. Cover; cook on Low heat setting about 5 minutes longer or until beans are hot. Top with cheese and onions and sour cream.
My all time favorite comfort food is potato soup – and there are so many varieties of potato soup none of them ever get boring. But they not only fill up my stomach they also fill my love cup. Such great memories of my mom fixing potato soup in the winter.

My favorite crock pot pleaser is the eye of the roast and a jar of mild giardiniera . thats it, just put in crock pot for 8 hours and it almost shreds itself for you. put on nice french rolls and your done….Easy and delicious!

I forgot to mention my favorite comfort food: Chicken dumpling soup. It’s pretty simple: Chicken broth or stock, whatever veggies are handy in the fridge, a handful of orzo, seasonings like basil, garlic, sometimes lemon juice for a bit of zing, etc (however you like chicken soup). The dumplings are a cup of flour, a teaspoon or so of baking powder, seasonings (salt, pepper, etc), an egg, and a little water until the dough is sticky. When the soup is boiling, submerge a teaspoonful of dough into the boiling broth. The dumpling should fall right off the spoon into the soup. Cover & cook till they’re done in the middle. 🙂

My fav comfort recipe is going to be my 36 hour chili recipe… the beef is marinated for 12 hours in tequila and hot sauce, then (along with a host of other ingredients) cooked low and slow for 24 hours… always a hit at the Super Bowl party, and every gathering I bring it to…
I like to serve it in bread bowls…. and now I’m hungry!!

Turkey Chili

Chili-hands down. With a pan of homemade cornbread thrown in.
Chicken and dumplings!
Homemade Whole Wheat Bread
(makes 5 loaves)
5 C warm water (110 degrees to 125 degrees)
7 C. Whole wheat flour
2/3 C. vegetable oil
2/3 C. raw honey
2 Tbsp yeast
Mix briefly, then cover bowl for 15 minutes in order for the yeast to activate. Then add:
7 – 9 more C. whole wheat flour
2 Tbsp Sea salt
Knead dough 6 minutes by mixer, or by hand until dough is smooth – not sticky, but not too dry. (If using mixer, dough will separate from the side of the bowl).
Place in large bowl that has been well-oiled. Place bowl in warm place (oven heated to 120 degrees) for about 45 minutes, until double in size. Punch dough down, divide dough into 5 equal pieces and shape into loaves, placing each loaf into well-oiled loaf pans. Return to warm place for about 30 minutes, until doubled in size.
Bake at 350 degrees for 25 minutes. Remove from oven and brush scrambled egg on top of crust. Return to oven for 5 more minutes.
Remove from pans immediately and allow to cool on rack, at least 2″ apart.

I love love love Ropa Vieja in the winter. Ropa Vieja is a Cuban beef stew dish that can be served over rice. It is so delicious. The dish is actually very comforting and keeps your tummy full and satisfid! 🙂
